This recipe makes around 5 toddler portions or enough to feed a family!
1 knob of butter
1 chopped spring onion
Handful of chopped mushrooms (super small)
120g risotto rice
250ml low salt stock
1 tin of chopped tomatoes
50g grated cheese
- Add your butter + vegetables to the pan and fry on a medium heat until soft (around 5 minutes)
Add in your rice + stock and cook for around 5 minutes until the rice is covered and slightly translucent
Add your tin of tomatoes, cover with a lid and simmer on low for around 20 mins (or until soft)
Stir in your grated cheese and heat through until gooey.
Serve up with extra cheese (or on it’s own) – DELICIOUS
