
Serve these as a tasty lunch treat for your little ones - they also taste great with an egg on top!

½ Cauli
½ Onion Sliced
1 Carrot Grated
1 tsp Paprika
1 Pepper Diced
1 Egg
40g Frozen Peas
65g Flour
Method
- Start by slightly cooking the cauliflower in a pan of boiling water for 3-4 mins until it is just beginning to soften
- Remove the cauliflower from the boiling water – if you are using frozen peas putting them in the water for about 3 minutes will ensure they defrost
- Drain the pan and set your peas aside
- Cut your cauliflower into bite sized chunks (about the same size as your peas) and leave on a paper towel to drain off any excess moisture
- Add your cauliflower, peas, grated carrot, diced pepper, sliced onion, flour, paprika and egg into a bowl
- Combine all the ingredients well – this can be done with your hands if you fancy getting nice and messy with your little ones
- Heat up a large frying pan with a drizzle of vegetable oil (it’s very important that your pan is hot before you put your patties in so don’t be afraid to wait!)
- Once your pan is hot you can mould your mixture into burger shaped patties and begin to cook them
- They should need about 4-5 minutes on each side until they’re just starting to crisp and are becoming a lovely golden-brown colour
- When they’re done you can serve them plain to younger children, or with a fried egg on top for yourself or your older kids. A healthy and easy way to sneak some vegetables into their diet!
