Annabel Karmel Chicken 2 Ways

We’ve teamed up with Annabel Karmel to give you some great recipe ideas that you can create using the Itsy Blitz® blender. This weeks recipe of the week is Annabel Karmel’s chicken 2 ways – with either broccoli puree or for the baby led we’ve included a recipe for broccoli balls. Great from 6 months upwards, makes 1 portion or 4 balls, egg free and can be frozen to save for another day.
Egg Free
Annabel Karmel Chicken, Quinoa and Broccoli Puree
Ingredients
½ teaspoons olive oil
10g onion, finely chopped
10g carrot, grated
10g apple, peeled and finely diced
1/4 small clove garlic, crushed
10g cooked quinoa
15g cooked chicken, chopped
50mls low in salt chicken stock or water
10g broccoli florettes
5g mature cheddar, grated
Method
- Heat the oil in a small saucepan. Add the onion and apple and fry for 2-3 minutes. Add the garlic and cook for 15 seconds. Add the quinoa and chicken stock. Cover with a lid and bring up to the boil. Simmer for 7 minutes.
- Add the broccoli and continue to simmer for another 7 minutes or until the chicken is cooked and the vegetables are tender. If using cooked chicken add this once the vegetables are tender. Remove from the heat and stir in the cheese.
- Spoon the mixture into the Itsy Blitz® blender & add up to 20mls of water. Screw on the lid and attach to the base. Blend.
Makes 1 portion
Chicken, Quinoa and Broccoli Balls
Ingredients
10g broccoli florettes
10 onion, finely chopped
10g carrot, finely chopped
10g apple, peeled and finely chopped
1/4 clove garlic, crushed
10g cooked quinoa
15g cooked chicken, chopped
5g mature cheddar, grated
5g breadcrumbs
Method
- Cook the broccoli in a steamer for 5 minutes, cool and finely chop.
- To make the breadcrumbs add a piece of crust-less white bread and blitz in the Itsy Blitz® blender, alternatively you can use store bought breadcrumbs.
- Measure the ingredients into the Itsy Blitz® blender. Screw on the lid and attach to the base. Blend until chopped. Spoon into a bowl. Shape the mixture into 4 small balls.
- Heat a little oil in a frying pan. Fry the balls for about 5 minutes turning over until golden brown.
